Horseradish (Amoracia rusticana)

 

Exposure: Full sun to light shade. Zones 2 to 8.
Soil: Will grow in most garden soils.
Growth habits: A tap-rooted perennial, horseradish produces straplike leaves up to 3 feet long from a central crown. Plant it where you want it as horseradish is challenging to eliminate once established.
Landscape uses: Use as a garden perennial vegetable or as a tap-rooted companion plant for fruit trees.
Edible/Medicinal properties: Horseradish has edible leaves that can be cooked similarly to kale. It also has a pungent root that makes pungent sauces. The root is antibiotic, fungicidal, expectorant, and good for treating allergies, sinus problems, colds, and flus.
